FISH CURRY/ MEEN KOLAMBU

INGREDIENTS

  1. Fish
  2. Tamarind – 1 lime size
  3. Green chilly – 3
  4. Tomato – 1
  5. Ginger – 1 small piece
  6. Coconut Paste – 1/2 cup
  7. Chilli powder – 1 Tsp
  8. Coriander Powder – 1/2 Tsp
  9. Curry leaves
  10. Coconut oil – 2 Tsp
  11. Salt to taste

Soak tamarind in 2 cups of water for 20 minutes

  • After 20 minutes mash tamarind well with ur hands and filter the juice separately.
  • Take a pan, add tamarind juice and slit green chillies.

  • Now turn the flame on and boil the tamarind juice on a medium flame .
  • Boil till it is reduced to half.
  • Add tomato, ginger to a blender and make a puree.

  • When the tamarind juice is reduced to half add tomato ginger puree.

  • Now add chilli powder, turmeric powder and coriander powder.

  • Cover pan with a lid and cook till the raw smell of tomato disappears.

  • Add coconut paste and salt.

  • Add fish and cook on a low flame. I use king fish. you can use any fish of your choice.

  • Take a pan,add coconut oil . When oil is hot add finely chopped onions and saute it till golden brown.

  • When the fish is cooked, add the onions and finely chopped curry leaves.
