FISH CURRY/ MEEN KOLAMBU
INGREDIENTS
- Fish
- Tamarind – 1 lime size
- Green chilly – 3
- Tomato – 1
- Ginger – 1 small piece
- Coconut Paste – 1/2 cup
- Chilli powder – 1 Tsp
- Coriander Powder – 1/2 Tsp
- Curry leaves
- Coconut oil – 2 Tsp
- Salt to taste
Soak tamarind in 2 cups of water for 20 minutes
- After 20 minutes mash tamarind well with ur hands and filter the juice separately.
- Take a pan, add tamarind juice and slit green chillies.
- Now turn the flame on and boil the tamarind juice on a medium flame .
- Boil till it is reduced to half.
- Add tomato, ginger to a blender and make a puree.
- When the tamarind juice is reduced to half add tomato ginger puree.
- Now add chilli powder, turmeric powder and coriander powder.
- Cover pan with a lid and cook till the raw smell of tomato disappears.
- Add coconut paste and salt.
- Add fish and cook on a low flame. I use king fish. you can use any fish of your choice.
- Take a pan,add coconut oil . When oil is hot add finely chopped onions and saute it till golden brown.
- When the fish is cooked, add the onions and finely chopped curry leaves.
