COCONUT CURRY WITH DRUMSTICK & LIMA BEANS (MOCHAKAI)
INGREDIENTS
- Onion – 1
- Tomato – 1
- Drumstick – 6 piece
- Fresh lima beans / Mochakai – less than half cup (Pressure cooked 1 whistle)
- Tamarind juice – 1 cup
- Coconut milk / Paste – 1/2 cup
- Chilli powder – 1 Tsp
- Turmeric powder – 1/2 Tsp
- Coriander powder – 1/2 Tsp
- Cumin seeds – 1/2 Tsp
- Pepper – 1/2 Tsp
- Mustard seeds- 1/2 Tsp
- Garlic – 4 Cloves
- Salt to taste
- Oil
- Take a pan add 1 Tsp oil. When oil is hot add cumin seeds, pepper,onion. Saute it well. Add chopped tomatoes.
- Once it is cooled add it to a blender and make a fine paste.
- Add some oil to a pan. When oil is hot add mustard seeds.
- Add the tomato paste to pan.
- Add drumstick and little water. Cook it on a low flame until the drumstick gets cooked.
- Add lima beans/ mochakai to this.
- Mix chilli powder,coriander powder,turmeric to tamarind juice.
- Now add tamarind juice to pan and add coconut paste.
- Adjust salt to your taste and close the pan with lid.
- Cook it on a low flame until the oil oozes on top.
- Add chopped coriander leaves and serve.
