COCONUT CURRY WITH DRUMSTICK & LIMA BEANS (MOCHAKAI)

INGREDIENTS

  1. Onion – 1
  2. Tomato – 1
  3. Drumstick – 6 piece
  4. Fresh lima beans / Mochakai – less than half cup (Pressure cooked 1 whistle)
  5. Tamarind juice – 1 cup
  6. Coconut milk / Paste – 1/2 cup
  7. Chilli powder – 1 Tsp
  8. Turmeric powder – 1/2 Tsp
  9. Coriander powder – 1/2 Tsp
  10. Cumin seeds – 1/2 Tsp
  11. Pepper – 1/2 Tsp
  12. Mustard seeds- 1/2 Tsp
  13. Garlic – 4 Cloves
  14. Salt to taste

  • Take a pan add 1 Tsp oil. When oil is hot add cumin seeds, pepper,onion. Saute it well. Add chopped tomatoes.

  • Once it is cooled add it to a blender and make a fine paste.

  • Add some oil to a pan. When oil is hot add mustard seeds.

  • Add the tomato paste to pan.

  • Add drumstick and little water. Cook it on a low flame until the drumstick gets cooked.

  • Add lima beans/ mochakai to this.
  • Mix chilli powder,coriander powder,turmeric to tamarind juice.
  • Now add tamarind juice to pan and add coconut paste.

  • Adjust salt to your taste and close the pan with lid.
  • Cook it on a low flame until the oil oozes on top.

  • Add chopped coriander leaves and serve.
