KATHRIKAI MASALA/ EGGPLANT CURRY

INGREDIENTS

  1. Brinjal – 4
  2. Onion – 1 Large
  3. Ginger Garlic paste – 1 Tsp
  4. Green chilly – 2
  5. Coriander seeds – 1 Tsp
  6. Cashew nuts – 5
  7. Coconut – 3 Tbsp
  8. Fennel seeds – 1 Tsp
  9. Cloves – 3
  10. Cinnamon – 1 piece
  11. Chilli powder –  1 Tsp
  12. Turmeric – 1/2 Tsp
  13. Salt to taste
  14. Coriander leaves

  • Take a pan, add some oil. When the oil is hot add finely chopped onions and saute it on a low flame till it becomes golden brown .

  • Add ginger garlic paste.

  • Add brinjals, turmeric powder,chilli powder and salt.

  • Mix it all well . Add little water and cook it on a low flame.

  • Meanwhile we need to grind some of the ingredients for masala. Add cashew nuts, coconut,fennel seeds, clove and cinnamon to the blender .

  • Take a pan add few drops of oil. When oil is hot add green chillies and coriander seed. Fry it for a minute or two.

  • Add this to the rest of our ingredients and make a paste by adding some water.

  • Add this masala paste to brinjal.

  • Add little water if required and cover the pan using a lid. Cook it for 10 minutes.

  • Add Coriander leaves and turn the flame off.
