KATHRIKAI MASALA/ EGGPLANT CURRY
INGREDIENTS
- Brinjal – 4
- Onion – 1 Large
- Ginger Garlic paste – 1 Tsp
- Green chilly – 2
- Coriander seeds – 1 Tsp
- Cashew nuts – 5
- Coconut – 3 Tbsp
- Fennel seeds – 1 Tsp
- Cloves – 3
- Cinnamon – 1 piece
- Chilli powder – 1 Tsp
- Turmeric – 1/2 Tsp
- Salt to taste
- Coriander leaves
- Oil
- Take a pan, add some oil. When the oil is hot add finely chopped onions and saute it on a low flame till it becomes golden brown .
- Add brinjals, turmeric powder,chilli powder and salt.
- Mix it all well . Add little water and cook it on a low flame.
- Meanwhile we need to grind some of the ingredients for masala. Add cashew nuts, coconut,fennel seeds, clove and cinnamon to the blender .
- Take a pan add few drops of oil. When oil is hot add green chillies and coriander seed. Fry it for a minute or two.
- Add this to the rest of our ingredients and make a paste by adding some water.
- Add this masala paste to brinjal.
- Add little water if required and cover the pan using a lid. Cook it for 10 minutes.
- Add Coriander leaves and turn the flame off.
