PALAK PANEER

INGREDIENTS

  1. Paneer – 500 gm
  2. Onion – 2 small
  3. Tomato – 1 Large
  4. Palak – 1 Bunch
  5. Cumin seed – 1 Tsp
  6. Chilli Powder – 1 Tsp
  7. Coriander Powder – 1 Tsp
  8. Garam Masala – 1/2 Tsp
  9. Garlic – 4 Fine chopped
  10. Sugar – less than 1/2Tsp
  11. Kasoori methi leaves – 1 Tbsp
  12. Milk – 1/4 cup
  13. Salt to taste
  14. Ghee

  • We need to blanch the palak first. Add sugar to water and turn the flame ON.
  •  Add the palak leaves and cook.

  • Do not close the pan with lid it will end up changing the colour of palak.

  • Once the palak is cooked drain the water and let it cool.
  • Transfer to a blender and make  a fine paste.

  • Add ghee 2Tsp to a pan and add cumin seeds and fine chopped garlic. ( I used oil 1 1/2 Tsp and added 1/2 Tsp ghee at the end)

  • Saute it for a minute or two and add palak paste.

  • Cook it on low flame until the palak gravy turns thick.

  • Now take another pan and add 2 spoon oil and add onions.
  • Add a pinch of salt and saute onions.

  • Add ginger garlic paste.

  • Now add tomatoes ,chilli powder coriander powder ,garam masala and salt.

  • Mix it all well and cook until the raw flavours of masala disappears.

  • Add kasoori methi leaves and stir well.

  • Add paneer and palak gravy.

  • Mix it well. Add 1/4 cup milk . You can also add cream instead of milk.
