MUTTON BRIYANI

INGREDIENTS

  1. Mutton – 1/2 kg
  2. Basmathi Rice – 2 cups
  3. Onion – 2
  4. Tomato – 1
  5. Green chillies – 4
  6. Mint leaves – 1 cup
  7. Coriander leaves – 1/2 cup
  8. Ginger garlic paste – 2 Tbsp
  9. Cinnamon – 1 piece
  10. Cardamom – 2
  11. Cloves – 3
  12. Briyani leaf – 1
  13. Garam masala – 1 Tsp
  14. Red chilly powder – 1 Tsp
  15. Coriander powder – 1/2 Tsp
  16. Lime few drops
  17. Oil – 2 Tbsp
  18. Ghee – 2Tbsp
  19. Salt to taste
  • Wash the mutton twice. Add turmeric powder,ginger paste and pressure cook it for 10 whistles

  • Take one onion and cut it into half. Now insert fork to one half and show it to flame. (Onion with skin )

  • Do this for 5 minutes.Keep rotating the onion on all sides. when it turns brown turn the flame off.
  • Now we need to make a paste using this onion. Add mint and coriander leaves to this. Add little water only if required.

  • Separate the cooked mutton from water. Stock the water, we are going to cook rice with the same.
  • Take a pan add oil and ghee together.
  • Add garam masala spice to hot oil + ghee.
  • Now add ginger garlic paste and green chillies.

  • Add onion paste and mix it well.

  • To this add chopped onion. ( Chop 11/2 onions and use it here).

  • Add finely chopped tomato , mint leaves and coriander leaves.

  • Add mutton, two cups of rice and two cups of mutton stock.( If you don’t have 2 cups of mutton cooked water add normal water)
  • Add chilli powder,coriander powder,garam masala powder and salt. when the rice comes to top close the pan with a lid and cook it on a low flame for 20 minutes.DSC_0521
