VEGETABLE BRIYANI

INGREDIENTS

  1. Basmathi Rice – 3 cup
  2. Mixed vegetables – 1 cup
  3. Onions – 2 large
  4. Tomato – 1 large
  5. Ginger garlic paste – 11/2 Tsp
  6. Mint leaves – 1 cup
  7. Coriander leaves – 1/2 cup
  8. Chilli Powder – 3 Tsp
  9. Coriander Powder – 11/2 Tsp
  10. Garam Masala – 1 Tbsp
  11. Oil – 11/2 Tsp
  12. Ghee – 11/2 Tsp
  13. Cardamom – 2
  14. Cinnamon – 1 piece
  15. Cloves – 2
  16. Briyani leaf – 1
  17. Soya chunks – 1/2 cup
  18. Salt

  • Add soya chunks to boiling water and let it boil for 5 minutes.
  • After 5 minutes turn the flame off and drain the water. Squeeze the soya chunks to get rid of the moisture in it.
  • Take a pan, heat oil and ghee together.
  • Add whole garam masala ingredients.(cardamom,cinnamon,cloves,briyani leaf)

  • Add ginger garlic paste .

  • Add onions and a pich of salt.

  • Add tomatoes,mint leaves and coriander leaves.

  • Add the mixed vegetables( i used carrots,beans,peas), soya chunks, chilli powder,coriander powder,garam masala,salt.
  • Add water and bring it to a boil.

  • Add rice. ( Since i forgot to add garam masala before i added it here)

  • Cover the pan with lid and cook it on a low flame for 15 mins or transfer it to rice cooker.
