STUFFED BRINJAL / KATHRIKAI ROAST
INGREDIENTS
- Brinjal – 4
- Mustard seed – 1/2 Tsp
- Toor dhal – 1 Tsp
- Channa dhal – 1 Tsp
- Moong dhal – 1 Tsp
- Red chilli – 3
- tamarind – 1 small piece
- Almonds & Cashew – 3 to 4 (Optional)
- Salt to taste
- Oil (Gingely oil) – 2 Tbsp
- Dry roast toor dal , channa dhal, moong dhal, red chilli, tamarind, almond and cashew separately.
- Transfer all the dry roasted ingredients to mixer jar and add salt to it. Make a coarse powder.
- Now cut the brinjals. Make slits to stuff.
- Stuff the powder to brinjal and keep it aside.
- Now take a pan add oil and mustard seeds.
- When the mustard seeds splatters add brinjal.
- Add the leftover masala powder to top and add required salt .
- Close the pan with lid for 5 to 10 minutes.
- Add coriander leaves and serve hot.
- Serve with white rice/briyani.
