STUFFED BRINJAL / KATHRIKAI ROAST

INGREDIENTS

  1. Brinjal – 4
  2. Mustard seed – 1/2 Tsp
  3. Toor dhal – 1 Tsp
  4. Channa dhal – 1 Tsp
  5. Moong dhal – 1 Tsp
  6. Red chilli – 3
  7. tamarind – 1 small piece
  8. Almonds & Cashew – 3 to 4 (Optional)
  9. Salt to taste
  10. Oil (Gingely oil) – 2 Tbsp
  • Dry roast toor dal , channa dhal, moong dhal, red chilli, tamarind, almond and cashew separately.
  • Transfer all the dry roasted ingredients to mixer jar and add salt to it. Make a coarse powder.

  • Now cut the brinjals. Make slits to stuff.

  • Stuff the powder to brinjal and keep it aside.

  • Now take a pan add oil and mustard seeds.

  • When the mustard seeds splatters add brinjal.
  • Add the leftover masala powder to top and add required salt .

  • Close the pan with lid for 5 to 10 minutes.
  • Add coriander leaves and serve hot.
